I made spaghetti carbonara for the first time yesterday and it turned out very nice.
I couldn't get guanciale or pecorino so I substituted them for pancetta and grana padano.
First I boiled the spaghetti and fried the pancetta (without oil), then in a wok grated a whole load of cheese.
Then I added to the wok 3 egg yolks (dangerous), pepper, some pasta water and the liquid pork fat from the pancetta and whisked it together over gentle heat to form the sauce.
