The closest thing I had to Chinese food growing up in Oregon was the local Jack in The Box. They sold egg rolls and teriyaki chicken bowls. Spent most of my life thinking that was all Chinese food was.
my city has two asian/japanese places, which is kinda weird given where i am from and how big (or rather small) my city is the food is good, and i can order katsukare and teriyaki just like in my japanase animemes but its really expensive
